Looking for a new way to enjoy smoked salmon to start your day? This Salmon Breakfast Bowl consists of crispy pan-fried potatoes and onions, topped with smoked salmon, fried egg, fresh tomatoes, cream cheese, and finished with everything but the bagel seasoning and scallions.

It’s packed with tons of flavor, delicious texture, and is nice and hearty. The pan-fried potatoes and onions are the perfect base to all the delicious toppings, making this savory breakfast bowl super well-rounded.

Smoked Salmon Breakfast Bowl Ingredients

Here’s everything you need:

  • Potatoes. I really love using honey gold potatoes in this recipe, but truly any potato will do. I’ve made it with new potatoes and russet potatoes but am confident Yukon gold and fingerling potatoes will work, too.
  • Onion.
  • Eggs. I fried my eggs over easy for this recipe, but you can also make them over hard, sunny side up, or even scrambled if you prefer.
  • Smoked salmon.
  • Olive oil.
  • Salt.
  • Pepper.
  • Grape tomatoes. Or another tomato variety, chopped into bite-sized pieces.
  • Cream cheese.
  • Everything but the bagel seasoning.
  • Scallions. Optional, but recommended as they add a lot of flavor and nice little crunch.

Additional topping ideas and/or swaps:

  • Greens of choice like spinach, arugula, etc. You can wilt them in the pan after the eggs or keep them fresh.
  • Mushrooms. You can pan-fry them with your potatoes and onions or after your eggs for a topping.
  • Black beans or chickpeas. Warmed, toasted, or raw.
  • Avocado. Sliced or mashed.
  • Breakfast meat or an alternative like these Vegan Breakfast Sausage Patties.

Salmon Breakfast Tips and Tricks

How to Pan-Fry Potatoes and Onions for the Base of Your Breakfast Bowl

Start by making your crispy potato and onion base. Dice the potatoes and onions into small pieces. The smaller you cut the potatoes, the crispier they’ll get and the quicker they’ll cook.

Get the olive oil hot in the pan over high heat for about 2 minutes. Then, add the potatoes, onions, salt, and pepper. Toss to coat.

Continue to pan-fry over high heat, tossing occasionally for about 15-20 minutes until the potatoes are tender on the inside and crispy on the outside. Then, slide the potatoes off the pan and into two bowls.

Make Your Eggs for Your Breakfast Bowl

Use the same frying pan over medium heat to fry your eggs. There should be some residual oil in there but add a little more if need be. I love frying my eggs over easy for this breakfast bowl!

Alternatively, you can fry the eggs over hard, over medium, or sunny side up. You can also scramble the eggs if you prefer.

Once your eggs are ready, add one to each bowl right over the potatoes.

How to Assemble Your Salmon Breakfast

Now that your potato base and eggs are ready, all that’s left to do is assemble your smoked salmon breakfast!

Add the smoked salmon, cherry tomatoes (I like to slice them in half lengthwise), and dollop of cream cheese. I like to use room temperature cream cheese or even zap it in the microwave for 20 seconds to take the chill off.

Top your salmon breakfast with the everything but the bagel seasoning and some diced green onion (optional). Make it your own by swapping out or adding on a variety of toppings.

How to Properly Store and Reheat Leftovers

You may have some leftover potatoes and onions, which can be stored for 5 days in an airtight container in the refrigerator. They can be reheated in a frying pan or in the oven at 350°F for about 8-10 minutes.

If you do have leftovers of your toppings as well, you can save everything together in a sealed container for 5 days in the fridge. When you’re ready to reheat, set the toppings aside, reheat the potatoes, then reassemble your breakfast bowl over the hot potato base.

  • 12 ounces potatoes (honey gold or new potatoes preferred)
  • ½ medium yellow onion
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 large eggs
  • 4 ounces smoked salmon
  • 5 ounces grape tomatoes
  • 2 ounces cream cheese
  • ¼ teaspoon everything but the bagel seasoning
  • 2 stems scallions (aka green onion, optional)

Instructions

  • Use a sharp knife to dice the potatoes, and peel and dice the half an onion. Get the olive oil hot in the pan over high heat for about 2 minutes.

  • Add the diced potatoes and onions to the hot oil. Add the salt and pepper and toss. Cook over high heat, tossing occasionally until the inside of the potatoes are tender and the outside is crispy.

  • Add the pan-fried potatoes and onions to two bowls and put the pan back over heat. If the pan needs a little more oil, add it now.

  • Fry (or scramble!) your eggs to your preferred temperature* and add to the bowl with your potatoes.

  • Complete your breakfast bowls with smoked salmon, halved grape tomatoes, a dollop of cream cheese, and everything but the bagel seasoning. Option to garnish with green onions.

  • *For over easy eggs, allow the egg to fry until the white is opaque. Then, remove your pan from the heat, flip the egg, and allow the residual heat on the pan to cook the second side of the egg for about 1 minute.
  • *For over medium eggs, use the same technique, but this time, do not remove your pan from the heat. Once you flip the egg, allow the egg to cook on the second side over medium-low heat for about 1 minute.
