I’m a firm believer in single serving recipes as a way to make from scratch cooking more manageable. You don’t have to slave away for hours making enough to serve an army when you really just want one little glass of lemonade to get you through a hot afternoon.

A lemonade recipe for one is the perfect afternoon pick-me-up, and it gets bonus points for being naturally sweetened! I love sweetening my drinks with honey (or honey simple syrup) because it blends right in like a simple syrup. If you’re not into honey, check out the customization ideas below for swapping it out.

Of course fresh, in season strawberries will give you the best result here, but I’m sure you could experiment with whatever you can find. You’re easily able to adjust the different ingredients to taste. If you prefer a stronger lemon flavor, just add more lemon juice, or more honey for extra sweetness.

How to make strawberry lemonade for one

  1. In a small bowl or mason jar, use a fork to mash the strawberries together with the honey.
  2. Add the hot water and stir until the honey is dissolved. Strain through a fine mesh strainer into a 10 ounce (or larger) glass.
  3. Add lemon juice and cold water, and stir to combine.
  4. Chill until ready to serve or serve immediately with ice cubes and any garnish such as lemon wedges, strawberry slices, or fresh mint leaves.

Top tips

How to hull strawberries

Hulling strawberries removes the top green part and the white portion just beneath it. You can do this by simply cutting off the top of the strawberries, or use a knife or other tool to remove it more accurately.

If using a knife, choose a small, sharp paring knife and insert the tip to the side of the leafy green portion. Cut out a small cone shape in a circular motion to remove the hull.

How to store

This is a single serving, so you’ll probably enjoy it all at once, but if you want to save it for later you can keep it in a glass covered with plastic wrap in the refrigerator for up to 4 days. I do not recommend storing it with ice as it will become dilluted.

Tips for customizing single serving strawberry lemonade

  • Add a splash of vodka for a strawberry lemonade vodka
  • Use maple syrup, stevia, or granulated sugar in place of the honey, adjusting to taste as needed
  • Use club soda in place of the cold water for a fizzy carbonated strawberry lemonade
  • Swap the strawberries for other berries such as raspberries, blackberries, or blueberries

FAQ

What is a fine mesh strainer?

A fine mesh strainer is like a small colander made of mesh that allows liquids through but not much else. You may want a smaller one when making drinks like this one.

Why use hot water to make cold lemonade?

The hot water allows the honey to dissolve and helps extract juice from the strawberries. It will cool off when you add the cold water and ice cubes.

Can I use frozen strawberries?

Yes, you can use frozen strawberries as long as you thaw them first. There will likely be a lot of liquid with thawed strawberries, so you may need to add less water. Taste and adjust as needed.
