Sausage Egg and Cheese Casserole with Bread

Many moons ago, Barbara went to Purdue University where she lived in Cooperative housing with a large group of girls. The house, called Glenwood Cooperative, was run by these girls who shared cooking and cleaning duties.

Barbara has a ton of great recipes from her Glenwood days, including this Egg and Sausage Breakfast Casserole.

She actually made it on a whim because she had a bunch of white sandwich buns left over from a birthday party. I think our Grandma Kuhn would be proud of her for not wasting them.

FAQs

Why is my breakfast casserole soggy? ›

Incorrect oven temperature - Casseroles that are baked at an oven temperature that is too low may not cook evenly, resulting in a soggy top and a firm or crunchy bottom. Too much liquid - Casseroles that have too much liquid may not be able to absorb all of the moisture, leading to a soggy top.

Why do you have to refrigerate breakfast casserole overnight? ›

The casserole is covered and refrigerated overnight to allow the liquid ingredients to be absorbed into the bread. This is a perishable mixture and should be cooked the morning or day after assembly.

Can you make a casserole with raw eggs ahead of time? ›

Yes, you can. Raw eggs are fairly stable in the freezer, especially when beaten or mixed with other ingredients. Check to see what else is in the casserole, though.

How do you know when egg casserole is done? ›

Just stick a knife into the center of your egg casserole recipe after 55 minutes of baking. If it comes out clean, your baked egg casserole is ready!

How do you make egg casserole not watery? ›

Add a starch. Even if you're a beginner cook, you probably know that adding a starch can help transform liquidy dishes into creamy delights. Cornstarch and flour are two popular options, but don't you dare add them directly to your casserole. Instead, make a slurry.

How do you make a moist casserole? ›

Pro Tip: Avoid Dry Casserole.

The best way to prevent it from drying out is to add a little bit of water, around ¼ cup, to the top of it. Allow the water to seep between the food and the sides of the baking dish. Cover with aluminum foil to seal in the moisture.

How long can uncooked egg casserole be in the fridge? ›

At this point, you can either bake it right away or refrigerate the casserole overnight and for up to 24 hours. During this time, the flavors mingle together and the bread has a chance to soak up some of the liquid and flavor.

Can you leave raw egg mixture in fridge? ›

If you've got raw egg yolks or whites left over from a recipe which you don't want to waste (let's face it, why would you?), you can store them in the fridge as long as you plan to use them within the next few days.

Is it safe to eat cooked eggs left out overnight? ›

Never leave cooked eggs or egg dishes out of the refrigerator for more than 2 hours or for more than 1 hour when temperatures are above 90° F. Bacteria that can cause illness grow quickly at warm temperatures (between 40° F and 140° F).

Can you make egg casserole 2 days ahead without? ›

Cover the casserole and store it (unbaked) in the refrigerator overnight or up to one day. Bake in the morning, according to recipe instructions. To freeze breakfast casserole prepare the recipe and add to your pan. Cover well with plastic wrap and then tinfoil and freeze for 2-3 months.

Should you bake a casserole covered or uncovered? ›

In general, you'll want to bake a casserole covered with aluminum foil for most of the cooking time. Covering the casserole helps lock in moisture and prevents it from drying out. If you don't cover the casserole or uncover it too soon, the casserole will dry out.

Is it better to cook casserole the day before or? ›

Make-ahead meals (especially baked casseroles) are terrific because you can completely assemble them in advance and bake them just before serving. They're the ultimate comfort food as they come bubbling hot and delicious straight from the oven to the table to the delight of family and friends.

Why did my egg casserole turn green? ›

It occurs when eggs have been cooked for too long or at too high a temperature. Our method – cooking eggs in hot, not boiling, water, and then cooling immediately – minimizes this.

Why is my egg casserole not done in the middle? ›

High heat cooks the outside faster than the inside, leaving the middle uncooked. Reducing the temperature distributes heat more evenly, allowing the middle to cook through. If uncooked in the center then cover at the same temperature and ad 15 minutes before checking again.

Do you have to refrigerate egg casserole overnight? ›

Eggs may contain salmonella bacteria. Cooking will likely kill most bacteria, but if left out of refrigeration, bacteria can grow rapidly, especially in warmer conditions. In order to avoid food poisoning, eggs should be kept refrigerated both before and after cooking.

Why is my hash brown casserole soggy? ›

Frozen hash browns will leak moisture during cooking, which could leave a soggy, sad mess behind. For the best results, let the frozen hash browns thaw overnight in the fridge, then thoroughly pat them dry to remove as much moisture as possible before cooking them to crispy.

Why is my sausage casserole watery? ›

Don't cover all ingredients with stock or you will have too much water when it starts to cook down. Like some other posters have said, corn flour or regular plain mixed and smoothed with water to a thick consistency prior to adding to the casserole will help thicken it.
