Have you ever had Low Carb Shepherd’s Pie? If not, it’s so easy to make. It is packed with a ton of good veggies and topped with cauliflower and cheese. Of course, I also like to top it with parmesan cheese. Eating this low carb meal can help you stay on track. If you love this regular dish, but don’t love the calories and carbs that come with it, then you’re going to love my version of the Low Carb Shepherd’s Pie.

My spin on shepherds pie (single serving) on this cold and dreary day. It was spiced ground beef, cheddar cheese and mashed cauliflower (store-bought). Super yummy.

All I did was brown the beef in butter with garlic, oregano, salt and pepper to taste. Did one later of cheese and put a thick layer of mashed cauliflower. I then microwaved it for 2 minutes to melt the cheese and broiled it for 4 minutes. Then I ate it all!

Yup! That’s pretty darn easy.

Easy Low Carb Shepherd’s Pie Recipe Ingredients

  • Ground Beef
  • Cheddar Cheese
  • Mashed Cauliflower
  • Butter
  • Garlic
  • Oregano
  • Salt and pepper to taste

Easy Low Carb Shepherd’s Pie Recipe Instructions

  1. Brown the ground beef with butter in a cast iron skillet.
  2. Add garlic, oregano, salt and pepper to taste.
  3. Layer the ground beef, cheddar cheese slices and mashed cauliflower in a small casserole dish.
  4. Bake it at 350 degrees (or microwave it as she did) until all is warm. About 20 minutes or more.
  5. Serve warm!

What to serve with low carb shepherd’s pie

Serving Low Carb Shepherd’s Pie can go with many different side dishes. One of my favorites include green beans. It’s easy to make many dishes with green beans. Another favorite of mine is roasted veggies. Putting a bunch of veggies on a pan and roasting them with a little bit of oil, salt, and pepper taste amazing.

Variations of low carb shepherd’s pie

A variation of Low Carb Shepherd’s Pie is easy. You can add mashed cauliflower to the mixture. You can also take radishes and put them in the Crockpot. You won’t even notice the difference between radishes and regular potatoes. They are so yummy! You can eat the radishes on the bottom of the Low Carb Shepherd’s Pie.

How to store leftovers

Once you are done eating the Shepherd’s Pie, you will need to store it in the fridge. It needs to be in an airtight container, so it doesn’t grow mold. You can also store it in the freezer. Once you have it in the freezer, it’s good for a few months.
