Simple Chocolate Truffle Recipe

Since we’ve been on our little journey to cut processed foods out of our diet and sticking to eating from scratch over the last few years, I’ve found that as time goes by I crave less and less chocolate.

A few years ago, you would NEVER catch me saying something like that! I was very addicted to chocolate until I realized that with most versions, I was getting headaches (from the processed sugar in them). Now the cravings have slowed, and we only eat chocolate for a treat once in a while (and I’ve found some made with not as processed sugars, so no more headaches!)

That said, I still love a good chocolate treat now and again! Normally I bake cookies like our easy No-Bake Cookies or the Oatmeal Lace Cookies and drizzle some chocolate on the top but this time I really wanted a delicious treat (and I really really don’t want to turn the oven on much on the warmer days!).

These 2 Ingredient Chocolate Truffles were the perfect solution. They are no-bake and SO easy to make! Plus, you only need 2 ingredients for these little delights. I hope you enjoy them; we love them for a special treat! I’ve also heard from many readers that they’ve given them as gifts.

These truffles do NOT use sweetened condensed milk, so the only sugar that they have in them is in the chocolate chips. Use sugar-free chocolate chips, and you’ve even got a sugar-free snack!

Ingredients in 2 Ingredient Chocolate Truffles

What You Need:

  • Cream Cheese. You will want this softened very slightly so it’s easy to work with. I like the full-fat cream cheese.
  • Chocolate Chips. I’ve used semi-sweet and milk chocolate chips, but you can use just about any flavor you’d like. Get creative!

Oh yes, that really is all. 🙂

Instructions for Making 2 Ingredient Chocolate Truffles

Place the cream cheese in a bowl. You want it to be softened slightly so you are able to mix in the chocolate easily but you don’t want it too melty so that you can’t form balls with it. Placing it at room temperature for a bit before you make these will do the trick.

2 Ingredient Chocolate Truffles Recipe (4)

Melt the 1/3 cup of chocolate chips in another bowl. You can do this on the stovetop in a small saucepan or in the microwave. Stir to make sure there are no large pieces.

Pour the melted chocolate into the cream cheese. Are you drooling yet?

2 Ingredient Chocolate Truffles Recipe (6)

Whip the melted chocolate into the cream cheese. I could easily incorporate it by just using a spoon, but you would also use an electric mixer to make sure all the chocolate is mixed in, and there are no large pieces of plain cream cheese left.

2 Ingredient Chocolate Truffles Recipe (7)

Using a small cookie scoop (or just a tablespoon), drop spoonfuls of the chocolate mixture onto a cookie sheet covered in waxed paper or parchment paper. Place this pan in the fridge and let the balls chill for a few hours until they are hardened.

2 Ingredient Chocolate Truffles Recipe (8)

Once the truffles are hardened, melt more chocolate chips and dunk the balls until they are coated. If you don’t want to use so many chocolate chips, you can skip this step and coat the truffles in cocoa powder instead.

Variations to the Basic Recipe

Yum, these Simple Chocolate Truffles are such a tasty treat! Store in a covered container in the fridge until you are ready to enjoy. You could add different flavorings (like orange or raspberry or pure vanilla extract) for a little bit of a different treat or even whip in some peanut butter for chocolate peanut butter truffles!

You could also try using different kinds of chocolate chips to change up the flavor and look. Vanilla chips for white chocolate truffles, peanut butter chips, dark chocolate for a dark chocolate truffle….the sky is the limit! You could also use sugar-free chocolate chips to make this a totally sugar-free treat (keto chocolate truffles!) very easily.

They could also be coated with something other than melted chocolate, such as unsweetened cocoa powder, shredded coconut, powdered sugar, or crushed candy cane.

You could also make the recipe as is and sprinkle them with a bit of crushed pistachios or other nuts, sea salt, or another small garnish.

How to Store Homemade Truffles

Any leftover truffles that aren’t getting eaten right away should be stored in an air-tight container in the refrigerator for up to 2 weeks. These truffles do not do well in the freezer, so I wouldn’t recommend freezing.

FAQs

How to prepare a truffle? ›

Typically, truffles are thinly shaved on top of a cooked meal but if you grate them on a Microplane instead, the fine shavings incorporate better with the dish. Truffles are commonly used in pasta dishes, risotto, sauces, or grated over seafood or meat.

What is the best chocolate to use for truffles? ›

I love Baker's or Ghirardelli brands. If you want to splurge, Scharffen Berger is exceptional! Semi-sweet or dark chocolate make a very intense chocolate truffle and milk chocolate yields a sweeter truffle. If using milk chocolate, reduce the cream to 1/2 cup as milk chocolate is much softer than dark chocolate.

What makes up a chocolate truffle? ›

Most chocolate truffles contain relatively few ingredients. In its simplest form, chocolate truffles demand two ingredients: double cream and high quality chocolate. You can also add a knob of butter for extra richness. Because not much goes into a chocolate truffle, you'll want to use good quality chocolate.

How to prepare and cook truffles? ›

Avoid a lot of heat: Don't cook them too much or you will drive off much of the flavour and aroma. If using in a hot dish, such as a soup or sauce, slice or grate the truffle in just before serving or warm briefly in a little oil. Use quickly: The strength of the truffle flavour will naturally decrease over time.

How Long Will homemade chocolate truffles last? ›

What cocoa powder is best for truffles? ›

The process is slightly more involved, but if you're willing to make homemade chocolate truffles you should make the best! Rolled in great cocoa: I'm obsessed with Cacao Barry Extra Brute cocoa powder, but any great alkalized (Dutch-processed) cocoa will be delicious.

Should you refrigerate chocolate truffles? ›

Do not refrigerate chocolate. Whether you only eat gourmet truffles or consume any chocolate put in front of you, please don't store chocolate in the fridge. Melt the coating chocolate. Dip the truffles in the chocolate, letting the excess run off. Re-stab them into the styrofoam, and re-freeze to set. Using your finger, dab a little bit of the melted chocolate into the hole from the toothpick.
